St Cergue (St-Cergue - La Dôle) is a small village at 1050m, on the train line from Nyon. They have two small ski areas in the village; the main two slopes are floodlit for night skiing and this is the best time to ski in St Cergue, followed by a beer or a fondue in one of the many local restaurants.
La Dole is a 15 minute drive from St Cergue (or you can take the train and ski bus) and another review is excellent and covers most of the important things. I would just add that you can also connect directly (ski) across to the the massif des Tuffes which connects into an additional 15 runs including some excellent greens for new skiers.
If you have to hire ski equipment it's really worth heading to Les Rousses town center where there are several places to rent or buy, my favorite is Intersport, on Rue Pasteur, where they are friendly, well stocked and have a quick boots-skis-pay system. Avoid the queues early in the morning at the piste side rental places. Milena Sports, in St Cergue, is very expensive and the equipment limited so only go there if you have to.
Eating on the slopes can be a challenge but here are several places to choose from: in La Dole the quickest is to grab a hotdog at one of two little wooden snack bars, over on the French side the best by far is the Flocon by the Balancier lift. If you find yourself in Jouvencelles at lunch time then try to get a seat at the creperie, quick and kid friendly.
The other reviewer is is right about the snow making at La Dole but the French side have plenty of cannons and the nearby La Serra area somehow manage to keep the runs open that little bit longer.
